Antonello Marongiu
Born in Ilbono in the Ogliastra area in Sardinia.
A partner and in charge of the dining room. He’s been working in the restaurant field for thirty-five years now. He ran the Triangolo for seventeen years, a restaurant in the center of Montecarlo, very popular in the 90’s.
Andrea Pagano
A native of Gioi in the Cilento.
A partner and in charge of the dining room. He’s been working in the restaurant field for twenty-five years now and is specialised in Italian and French cooking. He has a ten years experience of working in four star restaurants in Nice and the Principality of Monaco.
Francesco Spiga
Born in Lunamatrona in Sardinia.
A partner and the chef. He’s been working in the restaurant field for thirty years now. Specialised in traditional Italian cooking. He was the chef of the Monegasque restaurants, Chez Gianni, Giacomo, Lorenzo and Rampoldi.
